Egg Roll in a Bowl

Recipe: easy egg roll in a bowl

It’s getting today and I really wanted something hot and savory for lunch, so I put this together in about 15 minutes and it was delicious! Not only am I satisfied, I’m excited to have leftovers for lunch this week - and I love a good accidental meal prep! 


Ingredients

  • 1 lb. of ground beef
  • 1 - 14 ounce bag of cabbage slaw mix
  • 1 tsp of sea salt
  • ½ tsp of black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3 - 5 TBSP tamari sauce (or coconut aminos or soy sauce - I use tamari  or coconut aminos because they're gluten free)
  • 1 TBSP rice wine vinegar
  • 1 tsp sesame oil


Directions

  1. Brown the ground beef in a large skillet over medium-high heat. 
  2. Once the ground beef is cooked through, add your salt, pepper, and onion powder and stir until distributed evenly. 
  3. Add a bag of cabbage slaw mix. This will look like a lot at first, but I promise, it cooks down.
  4. Add the tamari sauce, rice wine vinegar, and sesame oil and stir to incorporate. 
  5. Let this simmer, stirring occasionally, for about 6-8 minutes or so - until the cabbage cooks down to your liking. 
  6. Serve and enjoy - and save the rest for leftovers! 


Most “Egg Roll in a Bowl” recipes I’ve found on the internet have a sweetener, like honey, added to it, but I really prefer this dish without it. This allows me to keep my total carbohydrate and added sugar intake lower which helps me maintain stable blood sugar levels (and energy levels) throughout my day.

Meet John Pretti. Born in 1964 and raised in Germany by a German mother and American father, who was a military officer in the U.S. Army.
